Sautéed Mushrooms for Steak (and Burgers)

These Sautéed Mushrooms for Steak may be the best bite on your plate. They cook in one pan in about fifteen minutes. The only real trick is salting at the right time, and resisting the urge to stir too soon. I find myself spooning leftovers over burgers, and adding them to casseroles all week.

Ingredients

  • 3 tablespoons unsalted butter
  • 16 ounces sliced cremini mushrooms baby Bellas
  • 3 sprigs fresh thyme or rosemary
  • 1 tablespoon minced garlic
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon sea salt

Instructions

  • Melt the butter in a large cast-iron skillet over medium heat.
  • Add the mushrooms and stir to coat. Add the fresh herbs.
  • Cook for 3 minutes without stirring. Continue to cook, stirring only occasionally until the mushrooms are tender and golden brown, about 10 minutes total.
  • Add the garlic to the skillet and stir for 30 seconds.
  • Stir in the vinegar and remove from heat. Sprinkle with salt and stir again. Remove herbs before serving.
