INGREDIENTS

For the Pan – 1 tablespoon unsalted butter – 2 tablespoons all-purpose flour Crumb Topping – ½ cup sugar – ⅓ cup flour – ½ teaspoon cinnamon – ¼ cup butter cubed Bread – 2 cups all-purpose flour 9 ounces; 256 grams – ¾ cup granulated sugar – 1 tablespoon baking powder – 2 teaspoons ground cinnamon – 1 teaspoon salt – ½ cup buttermilk – ½ cup applesauce – 2 large eggs at room temperature – 1 teaspoon vanilla extract – ½ cup butter melted and cooled – ½ cup peeled and chopped apples Optional Glaze – 1 cup confectioner’s sugar – 4 teaspoons water

– Position the rack in the lower third of the oven. Preheat the oven to 350°F. – Prep a 9 x 5 loaf pan by buttering it and then sprinkling with flour. Tap out any excess flour. – Make the Crumb Topping

– In a small bowl whisk together the sugar, flour, and cinnamon. Cut in the butter with a pastry blender or fork until crumbly.

– In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt.

– In a medium bowl, combine the buttermilk, applesauce, eggs, and vanilla. Whisk until blended. Pour over the dry ingredients and stir in the butter until just combined. Stir in the apple.

– Pour the batter into the prepared plan and spread evenly.

– Sprinkle the prepared topping over the bread. Bake, rotating hallway through, for 50 to 55 minutes, until a toothpick inserted in the center comes out clean. If your bread starts to get to brown at the end, you can tent the bread with aluminum foil.

– Let cool in the pan on a rack for 30 minutes, and then remove from pan. Optional Glaze – If desired, make a glaze by combining 1 cup of confectioners sugar and 4 teaspoons water in a small bowl. Add more liquid, 1 teaspoon at a time as needed. Drizzle over the loaf.
