Ingredients

Crumb Topping
- ½ cup sugar
- ⅓ cup flour
- ½ teaspoon cinnamon
- ¼ cup butter cubed
Bread
- 2 cups all-purpose flour 9 ounces; 256 grams
- ¾ cup granulated sugar
- 1 tablespoon baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- ½ cup buttermilk
- ½ cup applesauce
- 2 large eggs at room temperature
- 1 teaspoon vanilla extract
- ½ cup butter melted and cooled
- ½ cup peeled and chopped apples
Optional Glaze
- 1 cup confectioner’s sugar
- 4 teaspoons water
Instructions
Prep the Pan
- Position the rack in the lower third of the oven. Preheat the oven to 350°F.
- Prep a 9 x 5 loaf pan by buttering it and then sprinkling with flour. Tap out any excess flour.
- Make the Crumb Topping
- In a small bowl whisk together the sugar, flour, and cinnamon. Cut in the butter with a pastry blender or fork until crumbly.
Make the Bread
- In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
- In a medium bowl, combine the buttermilk, applesauce, eggs, and vanilla. Whisk until blended. Pour over the dry ingredients and stir in the butter until just combined. Stir in the apple.

Top and Bake
- Sprinkle the prepared topping over the bread. Bake, rotating hallway through, for 50 to 55 minutes, until a toothpick inserted in the center comes out clean. If your bread starts to get to brown at the end, you can tent the bread with aluminum foil.
- Let cool in the pan on a rack for 30 minutes, and then remove from pan.
Optional Glaze
- If desired, make a glaze by combining 1 cup of confectioners sugar and 4 teaspoons water in a small bowl. Add more liquid, 1 teaspoon at a time as needed. Drizzle over the loaf.
