INGREDIENTS

– 2 tablespoons olive oil – 2 teaspoons minced garlic – ¼ teaspoon crushed red pepper – 1 large bunch of kale stemmed and torn (about 8 cups) – ½ teaspoon sea salt – ¼ teaspoon freshly ground black pepper – 1 ½ cups cooked white beans drained and rinsed – 1 lemon juiced – 3 tablespoons toasted pine nuts optional

– Heat oil in a large skillet over medium heat. 

– Add garlic and crushed red pepper and stir for 1 minutes. 

– Add kale and seasonings. 

– Cook, stirring frequently, until the kale is wilted, about 3 minutes

– Add the white beans to the skillet and cook for 2 more minutes or until heated through. 

– Stir in lemon juice. Top with pine nuts and serve warm.
