Ingredients
- Olive Oil: Use your favorite oil; avocado oil would be a great alternative.
- Minced Garlic: Freshly minced is best, but frozen or jarred works, too.
- Crushed Red Pepper Flakes: Use more or less to taste.
- Kale: Both curly kale and lacinato kale work well.
- Salt and Pepper: I use sea salt, but kosher salt is a great option. Freshly ground black pepper is best.
- Cooked White Beans: A can of white beans makes it convenient, but cooking your own is a great option as well.
- Lemon: Fresh is best.
- Toasted Pine Nuts: You could also finish this with walnuts or even Parmesan cheese if you aren’t vegan.
Step by Step

Tips and Tricks
- Feel free to add other vegetables to the mix - onions and red peppers are nice here.
- To add flavor depth, toast the pine nuts in a dry skillet or in the oven. Make sure you watch carefully, as pine nuts burn quickly.
- You can prep ahead by washing your bunches of kale and keeping them in an airtight container in the fridge.
