– 8 ounces tortilla chips – 2 tablespoons avocado oil – 1 small yellow onion chopped – 1 jalapeno seeded and diced – 1 pound ground beef – 2 tablespoons taco seasoning – ½ teaspoon salt – Water about ¼ cup – ¼ cup salsa – 4 ounces shredded cheddar cheese – For serving: sour cream scallions cilantro, diced tomatoes, pickled jalapeño, black olives, corn. avocado, guacamole, pickled red onion

– Preheat your Blackstone griddle to medium heat. Add the oil to the griddle. Line a baking sheet with parchment paper. Arrange the chips on the baking sheet. If you like, set the baking sheet on one side of the Blackstone to warm the chips. (Just make sure you have a pot holder handy!)

– Add the onion and jalapeño and cook for 3 minutes, add the ground beef, using a spatula to break the meat apart.

– Cook until the ground beef is browned, about 5 minutes.

– Sprinkle with the taco seasoning and salt, and then use a water squeeze bottle to add water. Stir to combine and then fold in the salsa.

– Cook for another 3 minutes. Remove the meat from the griddle and arrange on top of the tortilla chips.

– Sprinkle the cheese on top. Place the baking sheet on your griddle. Close the lid (or use a dome) and cook for 3 to 5 minutes, until the cheese melts.

– Add your desired toppings and serve immediately.
