15-Minute Blackstone Zucchini with Parmesan

If you're not cooking zucchini on the Blackstone yet, this recipe is going to change that. A hot griddle gives you that perfect sear and a little char around the edges, while garlic and Parmesan do the rest of the work. Blackstone zucchini comes together quickly, uses just a few ingredients, and pairs with pretty much everything.

Ingredients

  • 2 zucchini sliced
  • 2 tablespoons avocado oil
  • 1 teaspoon sea salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon fresh ground black pepper
  • ¼ cup Parmesan cheese
  • 2 tablespoons chopped pecans optional

Instructions

  • Place the zucchini in a bowl and toss with the avocado oil, salt, garlic powder, and pepper.
  • Preheat an oiled griddle to medium-high heat.
  • Add the zucchini, and cook for 4 to 6 minutes, stirring frequently, or until the zucchini is lightly charged.
  • Top with parmesan and pecans and serve immediately.
