15-Minute Asian Quinoa Salad

This healthy Asian Quinoa Salad is so easy to make and has a delicious Asian Dressing. Perfect for vegan lunches and dinner, this Asian Salad Recipe is naturally gluten free.  I like to drizzle leftovers with a little extra dressing.

Ingredients

  • 1 cup cooked quinoa
  • 2 cups kale or Spinach, chopped
  • ½ cup Mandarin oranges drained
  • ¼ cup dried cranberries
  • 2 green onions chopped
  • 2 tablespoons fresh parsley chopped
  • ¼ cup Asian Salad Dressing more or less to taste
  • 2 tablespoons toasted sesame seeds
  • 2 tablespoons cashews

Instructions

  • In a large bowl combine quinoa, kale, oranges, cranberries, green onions and parsley. 
  • Toss with dressing and top with sesame seeds and cashews. 
  • Serve at room temperature or chilled. Drizzle with additional dressing if desired.
