15-Minute Sheet Pan Salmon Dinner

This salmon sheet pan dinner is a ridiculously easy meal that will surprise you with how flavorful it is! This is my go-to dish when I want a colorful and tasty meal that comes together in a flash.

Ingredients

  • 1 pound asparagus ends trimmed
  • 3 tablespoons extra virgin olive oil divided
  • Salt and Pepper
  • 20 ounces salmon filets
  • 4 shallots sliced
  • 1 lemon sliced into rounds
  • 1 cup cherry tomatoes

Instructions

  • Preheat your oven to 400 degrees and line a baking sheet with parchment paper.
  • Place the trimmed asparagus in a single layer on the baking sheet.
  • Season well with salt and pepper and drizzle with 1 tablespoon of olive oil.
  • Place the salmon on top of the asparagus, and scatter the shallots, lemon slices, and cherry tomatoes on top. Drizzle with the remaining 2 tablespoons of olive oil.
  • Cook for 8 to 15 minutes, until the salmon reaches the desired temperature and the asparagus is crisp-tender.
