Strawberry Truffles

Ingredients

  • ½ cup heavy cream
  • 2 tablespoons salted butter
  • 11 ounces white chocolate chopped fine
  • 1 ½ teaspoons vanilla extract
  • .8 ounces freeze-dried strawberries crushed

Instructions

  • Bring the heavy cream and butter to a simmer in a small saucepan.
  • Place the white chocolate in a metal or glass bowl and pour the warm cream and butter over it.
  • Whisk vigorously until the chocolate is melted.
  • Stir in the vanilla extract.
  • Refrigerate for about 2 hours, until firm enough to scoop.
  • Scoop from the bowl using a small cookie scoop. Roll into balls, about 1-inch thick.
  • Sprinkle with the crushed strawberries and chill until set.
