Air Fryer Sweet Potato Cubes

Air Fryer Sweet Potatoes are the ultimate no-fuss side dish that you'll find yourself making on repeat. Ingredients

  • 2 pounds sweet potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ¼ cup pecans coarsely chopped

Instructions

  • Peel your sweet potatoes, and cut them into cubes.
  • Bring a large pot halfway filled with water to a boil.  Remove the pot from the heat, and add 4 cups of room temperature water.
  • Add the potatoes to the pot and cover.
  • Let sit for at least 1 hour, or up to 3 hours. (This step is optional; it helps with the texture but if you are short on time you can skip it.)
  • Remove the potatoes from the water and drain.  Pat dry and place in a bowl.
  • Whisk together the oil, syrup, thyme, salt and pepper and toss with the sweet potatoes.
  • Preheat your air fryer to 325°F.  Arrange the potatoes in a single layer. Cook for 20 to 25 minutes, tossing occasionally.
  • Add the pecans, and cook for another 5 minutes.
