Air Fryer Sweet Potato Cubes
Ingredients
- 2 pounds sweet potatoes
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 teaspoon dried thyme
- 1 teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- ¼ cup pecans coarsely chopped
Instructions
- Peel your sweet potatoes, and cut them into cubes.
- Bring a large pot halfway filled with water to a boil. Remove the pot from the heat, and add 4 cups of room temperature water.
- Add the potatoes to the pot and cover.
- Let sit for at least 1 hour, or up to 3 hours. (This step is optional; it helps with the texture but if you are short on time you can skip it.)
- Remove the potatoes from the water and drain. Pat dry and place in a bowl.
- Whisk together the oil, syrup, thyme, salt and pepper and toss with the sweet potatoes.
- Preheat your air fryer to 325°F. Arrange the potatoes in a single layer. Cook for 20 to 25 minutes, tossing occasionally.
- Add the pecans, and cook for another 5 minutes.
