Ingredients

For the Pan

  • 1 tablespoon unsalted butter
  • 2 tablespoons all-purpose flour

Crumb Topping

  • ½ cup sugar
  • cup flour
  • ½ teaspoon cinnamon
  • ¼ cup butter cubed

Bread

  • 2 cups all-purpose flour 9 ounces; 256 grams
  • ¾ cup granulated sugar
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • ½ cup buttermilk
  • ½ cup applesauce
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup butter melted and cooled
  • ½ cup peeled and chopped apples

Optional Glaze

  • 1 cup confectioner’s sugar
  • 4 teaspoons water

Instructions

Prep the Pan

  • Position the rack in the lower third of the oven. Preheat the oven to 350°F.
  • Prep a 9 x 5 loaf pan by buttering it and then sprinkling with flour. Tap out any excess flour.
  • Make the Crumb Topping
  • In a small bowl whisk together the sugar, flour, and cinnamon. Cut in the butter with a pastry blender or fork until crumbly.

Make the Bread

  • In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
  • In a medium bowl, combine the buttermilk, applesauce, eggs, and vanilla. Whisk until blended. Pour over the dry ingredients and stir in the butter until just combined. Stir in the apple.
  • Pour the batter into the prepared plan and spread evenly.

Top and Bake

  • Sprinkle the prepared topping over the bread. Bake, rotating hallway through, for 50 to 55 minutes, until a toothpick inserted in the center comes out clean. If your bread starts to get to brown at the end, you can tent the bread with aluminum foil.
  • Let cool in the pan on a rack for 30 minutes, and then remove from pan.

Optional Glaze

  • If desired, make a glaze by combining 1 cup of confectioners sugar and 4 teaspoons water in a small bowl. Add more liquid, 1 teaspoon at a time as needed. Drizzle over the loaf.
