6 cups peeled and sliced frozen or fresh peaches or 3 -15 ounce cans drained 1 ½ cups sugar divided 1 cup all-purpose flour 1 teaspoon baking powder ⅛ teaspoon salt ½ cup butter 2 large eggs 1 teaspoon vanilla extract 1 lemon zested
Grease your slow cooker with butter. Add the peaches and ¼ cup of the sugar. Toss to coat.
Place the remaining 1 ¼ cups sugar, flour, baking powder, and salt in a food processor.
Cut the butter into small ¼-inch pieces, and add the butter to the dry ingredients. Pulse a few times until the mixture begins to come together.
Add the eggs, vanilla, and lemon zest. Pulse until the mixture comes together.
Use a tablespoon to drop bits of the flour mixture on top of the peaches, spacing them evenly.
Cook on high for 3 hours. Let cool uncovered for 5 minutes before serving.
