Ingredients

  • 6 cups peeled and sliced frozen or fresh peaches or 3 -15 ounce cans drained
  • 1 ½ cups sugar divided
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • teaspoon salt
  • ½ cup butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 lemon zested

Instructions

  • Grease your slow cooker with butter.  Add the peaches and ¼ cup of the sugar.  Toss to coat.
  • Place the remaining 1 ¼ cups sugar, flour, baking powder, and salt in a food processor.
  • Cut the butter into small ¼-inch pieces, and add the butter to the dry ingredients.  Pulse a few times until the mixture begins to come together.
  • Add the eggs, vanilla, and lemon zest.  Pulse until the mixture comes together.
  • Use a tablespoon to drop bits of the flour mixture on top of the peaches, spacing them evenly.
  • Cook on high for 3 hours.  Let cool uncovered for 5 minutes before serving.
