- Peaches: This recipe can be made with drained canned peaches, fresh peaches, or frozen peaches. I prefer frozen peaches when making peach cobbler in the crockpot over canned peaches, because the texture holds up better. But, I've tested this recipe both ways and canned peaches work just fine.
- Sugar: I used white sugar, but brown sugar or natural sugar works if you prefer. You can adjust the sugar to taste.
- All-purpose flour: Gluten-free flour would sub in with no issues here. Just make sure to use a 1:1 blend with xanthan gum.
- Baking powder: For best results, make sure yours is fresh.
- Egg: I recommend a large egg, but you could use an extra-large or medium egg if that is what you have on hand.
- Vanilla extract: Use a good quality; vanilla bean paste may also be used. For even more flavor, ½ teaspoon of ground cinnamon and ¼ teaspoon of nutmeg are great additions.

- Choose Your Peaches According to Your Desired Result: Fresh summer peaches will give the firmest results, while canned peaches end up flavorful but soft. Frozen peaches end up somewhere in the middle and are my preference here.

- Storage: Leftovers will stay fresh in the refrigerator for about 3 days. The microwave works great for reheating.

Crockpot Peach Cobbler
Ingredients
- 6 cups peeled and sliced frozen or fresh peaches or 3 -15 ounce cans drained
- 1 ½ cups sugar divided
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ⅛ teaspoon salt
- ½ cup butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 lemon zested
Instructions
- Grease your slow cooker with butter. Add the peaches and ¼ cup of the sugar. Toss to coat.
- Place the remaining 1 ¼ cups sugar, flour, baking powder, and salt in a food processor.
- Cut the butter into small ¼-inch pieces, and add the butter to the dry ingredients. Pulse a few times until the mixture begins to come together.
- Add the eggs, vanilla, and lemon zest. Pulse until the mixture comes together.
- Use a tablespoon to drop bits of the flour mixture on top of the peaches, spacing them evenly.
- Cook on high for 3 hours. Let cool uncovered for 5 minutes before serving.
