Place the mango chunks, sugar, water, lime juice and salt in a blender. Process until smooth, adding more water if necessary.
Taste, and adjust the sweetness if desired. (Mangos can vary wildly in sweetness depending on how ripe they are.)
Pour into a Ninja Creami pint container and freeze for at least 24 hours.
Remove the pint from the freezer and secure on the Ninja Creami base. Select the SORBET button, and process according to the manufacturer’s instructions.
