½ cup heavy cream 2 tablespoons salted butter 11 ounces white chocolate chopped fine 1 ½ teaspoons vanilla extract .8 ounces freeze-dried strawberries crushed
Bring the heavy cream and butter to a simmer in a small saucepan.
Place the white chocolate in a metal or glass bowl and pour the warm cream and butter over it.
Whisk vigorously until the chocolate is melted.
Stir in the vanilla extract.
Refrigerate for about 2 hours, until firm enough to scoop.
Scoop from the bowl using a small cookie scoop. Roll into balls, about 1-inch thick.
Sprinkle with the crushed strawberries and chill until set.
