Beat together the eggs, sour cream, salt, and pepper in a bowl. If you have time, let the mixture sit for 15 minutes, and then beat again before cooking.
Heat your griddle to low heat. (About 300° F to 315° F)
Melt the butter and then add the eggs.
Cook, folding with a spatula, for about 3 to 4 minutes until the desired consistency is achieved.
