Scrambled Eggs on the Blackstone

Scrambled Eggs on the Blackstone Griddle are the ultimate quick breakfast and perfect for your weekend brunch.  When you need to wow a crowd (and it's too early to be doing any wow-ing), this recipe really delivers.  It is delicious on its own, and perhaps even more so when served with a side of bacon and hash browns.  Follow along, and I will show you how to make perfect Blackstone griddle scrambled eggs every time.

Ingredients

  • 8 eggs
  • cup sour cream
  • ¼ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper
  • Butter for cooking

Instructions

  • Beat together the eggs, sour cream, salt, and pepper in a bowl.  If you have time, let the mixture sit for 15 minutes, and then beat again before cooking.
  • Heat your griddle to low heat.  (About 300° F to 315° F)
  • Melt the butter and then add the eggs.
  • Cook, folding with a spatula, for about 3 to 4 minutes until the desired consistency is achieved.
