Air Fryer Sweet Potato Cubes

Air Fryer Sweet Potatoes are the ultimate no-fuss side dish that you'll find yourself making on repeat. Perfectly crispy on the outside and tender on the inside, these sweet potatoes come together quickly and are a great addition to any meal. Whether you're enjoying them with breakfast or dinner, their caramelized edges and maple flavor will have you reaching for seconds.

INGREDIENTS

– 2 pounds sweet potatoes – 2 tablespoons olive oil – 2 tablespoons maple syrup – 1 teaspoon dried thyme – 1 teaspoon sea salt – ½ teaspoon freshly ground black pepper – ¼ cup pecans coarsely chopped

– Peel your sweet potatoes, and cut them into cubes. – Bring a large pot halfway filled with water to a boil.  Remove the pot from the heat, and add 4 cups of room temperature water.

– Add the potatoes to the pot and cover. – Let sit for at least 1 hour, or up to 3 hours. (This step is optional; it helps with the texture but if you are short on time you can skip it.)

– Remove the potatoes from the water and drain.  Pat dry and place in a bowl.

– Whisk together the oil, syrup, thyme, salt and pepper and toss with the sweet potatoes.

– Preheat your air fryer to 325°F.  Arrange the potatoes in a single layer. Cook for 20 to 25 minutes, tossing occasionally.

– Add the pecans, and cook for another 5 minutes.
