Ingredients
- Large Eggs: They provide protein, taste, and a great texture. You could substitute with egg whites for a lower calorie option or use tofu scramble for a vegan alternative.
- Greek Yogurt: This is what gives our spread its creamy texture. You could use regular yogurt if you prefer, but Greek yogurt tends to be thicker and creamier. Dairy free? Try a non-dairy yogurt instead.
- Garlic: This optional ingredient adds a depth of flavor that makes the spread even more delicious. If you're not a garlic fan, feel free to skip it.
- Chipotle Chile Powder or Cayenne: These spices bring heat to our spread. Use as much or as little as you like, based on your personal preference for spice.
- Sea Salt: A touch of salt enhances all the other flavors in our spread.
- Bread: Use regular or gluten free bread. I like to take flavors to the next level by using rye bread when I have it.
- Tomatoes: These add a fresh, juicy element to our sandwich. If you're not a fan of tomatoes, try replacing them with cucumber slices or roasted red peppers.
- Avocado: This brings a creamy, rich element to our sandwich. You can substitute with guacamole for an extra flavor boost or leave it out if you're not an avocado fan.
Step by Step
- Spray a medium skillet with olive oil and heat to medium low. Cook eggs any way you want.
- While the eggs are cooking, combine Greek yogurt, garlic, chipotle chile powder, and salt in a small bowl.
- Toast bread as desired. Then, spread yogurt on one slice and mash avocado on the other. Top the yogurt slice with the eggs and tomato, then put the avocado slice on top of it.
