Gnocchi with Broccoli, Sage & Parmesan
Ingredients
- 12 ounces Gnocchi gluten free if necessary
- 1 head broccoli chopped
- 2 tablespoons unsalted butter or Earth Balance
- 2 tablespoons avocado oil
- ¼ cup sage chopped
- ¼ cup walnuts toasted
- ½ teaspoon sea salt
- 1 teaspoon fresh ground black pepper
- 2 ounces fresh Parmesan grated or vegan parmesan
Instructions
- Cook gnocchi according to package directions, adding broccoli in the last two minutes. Drain.
- Heat butter and oil in a medium skillet to medium heat. Add sage, walnuts, salt and pepper. Cook for 1 to 2 minutes.
- Toss butter mixture with gnocchi. Toss with Parmesan and serve.
