A Few Things I've Learned
- You can use frozen broccoli in this griddled broccoli with lemon if you like, just don't expect much crispness. Thaw, drain and dry it before cooking. (Too much moisture will make it steam.) You’ll also want to reduce the cooking time by a few minutes since frozen broccoli is already partially cooked.
- Don't cut your broccoli too small. Bigger pieces char on one side without overcooking; tiny florets will burn before they cook through.
- Add the lemon juice after the broccoli comes off the griddle. Acid can dull the bright green color of broccoli when it hits high heat. Adding it at the end keeps the flavor fresh and the texture crisp-tender.
Mix it Up
Looking for broccoli with an Asian flair? Try adding a tablespoon of soy sauce and freshly minced ginger to the oil and seasonings and toss before cooking. Finish with a splash of sesame oil on the griddle in the last minute of cooking. Garnish with sesame seeds and green onions.
