Ingredient Talk
I’ve tested thicker fries, and they just don’t crisp up the same—medium to thin frozen fries (like shoestring or regular cut) work best on the griddle.
Avocado oil is my go-to for getting that golden crunch, but canola, olive, or vegetable oil all work fine too.
Tips and Tricks
- Don't Skip Thawing: Dumping a frozen hunk of French fries on your grill top can actually damage it. Make sure you take your fries out of the freezer and let them thaw for a few minutes.
- Post-Cooking Crispiness: To keep fries crispy after cooking, consider placing them on a cooling rack with a tray underneath. This prevents steaming, keeping your fries crispier for longer.
- Reheating: If you have leftovers, reheat them on the griddle over medium-high heat instead of the microwave. An air fryer is also a good alternative.
- Cooking Times Vary: Depending on the fries you are cooking, you may need to adjust the cooking time. Thicker fries will take longer to cook than shoestring fries.

Frozen French Fries on the Blackstone Griddle
Equipment
Ingredients
- 1 16-ounce bag frozen French fries, thawed slightly
- ⅓ cup avocado or canola oil
- 1 teaspoon sea salt
Instructions
- Remove your fries from the freezer and separate them into a bowl. Let them sit at room temperature for 15 minutes while your griddle preheats.
- Preheat your griddle to medium-low. If your griddle has a cover, keep it down while you are preheating.
- Spread the oil out in an even layer on the section of the griddle you will be cooking your fries.
- Add the slightly thawed fries in a single layer. Be careful to break them apart before adding to your griddle if you have any large clumps that are stuck together.
- Close the lid if you have one, and let them cook undisturbed for 7 minutes.
- Stir, and cook for another 10 to 15 minutes, until golden brown.
- Season with salt and serve warm.
