The potatoes are tender on the inside and crispy on the outside.

Ingredient Notes
If your potatoes are small, cut them in half; larger ones can be quartered so they cook evenly. If your potatoes are larger pieces than the ones in my photo, make sure you increase the cook time.
I like avocado oil for its mild flavor and high smoke point, but butter adds a nice golden crisp if you’re in the mood for extra richness. I recommend using a mixture of butter and oil, as the oil will help increase the smoke point.
Tips, Tricks, and Variations
- Make sure you adjust the cooking time based on the size of your potatoes. They are done when a fork slides easily into them.
- If you can’t find baby potatoes, you can cube Yukon gold potatoes or red potatoes.
- For a little smoke, smoked paprika is a nice addition.
- Want to make breakfast potatoes? You can cut them to a smaller dice and skip the garlic powder. Smaller potatoes on the griddle will take about 15 minutes to cook. They are fabulous served with bacon and scrambled eggs.
How to Make Blackstone Potatoes
Start by preheating your Blackstone to 400° F, which will be either low or medium-low, depending on your model and the conditions where you are. I like to use an infrared thermometer so my cook is perfect every time.




Crispy Blackstone Potatoes
Ingredients
- 1 ½ pounds baby potatoes halved or quartered if large
- 2 tablespoons avocado oil plus more for cooking
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
- 1 teaspoon sea salt more or less to taste
- ½ teaspoon fresh ground black pepper
Instructions
- Preheat your Blackstone Griddle to 400° F. (In most cases, this will be low heat.)
- Place the potatoes in a large bowl and toss with avocado oil, garlic powder, rosemary, salt, and pepper.
- Oil the griddle well.
- Add the potatoes and cook, stirring occasionally, for 20 minutes.
Stovetop Instructions
- Heat oil in a skillet over medium-high heat.
- Place the potatoes in a large bowl and toss with avocado oil, garlic powder, rosemary, salt, and pepper.
- Add the potatoes and cook, stirring occasionally, for 20 minutes. Turn the heat down towards the end if the potatoes start to get too brown.
