These Blackstone Potatoes are easy to make and quick to disappear. With just four ingredients (plus salt and pepper), you have a show-stopping side that never gets old. Blackstone side dishes don’t get any easier and more delicious than fried potatoes.

Once you try cooking potatoes on the Blackstone griddle, you may never want to cook them any other way!

It is so easy to make this delicious side with just a handful of ingredients that you probably already have on hand. The prep time is minimal, making this perfect for a busy weeknight side.

The potatoes are tender on the inside and crispy on the outside. Serve this with your favorite protein, and dinner bliss is imminent.

Ingredients for Making Potatoes on the Blackstone

Overhead photo of a bowl of potatoes, avocado oil, and seasonings.
    • Baby Potatoes: My potatoes were small, so I cut them in half, but you will want to quarter them if you have large ones.
    • Oil: I use avocado oil on my Blackstone griddle because it has a mild flavor and high smoke point. Butter can also be used.
    • Seasonings: Garlic powder, rosemary, salt, and pepper are all you need to transform your potatoes from bland to flavorful. Adjust the salt to your liking.

    Tips, Tricks, and Variations

    • Make sure you adjust the cooking time based on the size of your potatoes. They are done when a fork slides easily into them.
    • If you can’t find baby potatoes, you can cut Yukon gold potatoes or red potatoes.
    • For a little smoke, smoked paprika is a nice addition.
    • Want to make breakfast potatoes? You can cut them to a smaller dice and skip the garlic powder. Smaller potatoes on the griddle will take about 15 minutes to cook. They are fabulous served with bacon and scrambled eggs.

    Serving Suggestions

Steak and potatoes are a classic combination, but these Blackstone Potatoes work well with any protein.

You fry potatoes on a Blackstone Griddle in much the same way as you fry them on the stove.

Simply cut the potatoes into medium-sized pieces, and toss them with oil and herbs.

Preheat your griddle and cook until the potatoes are crispy and tender.

What temperature do I cook potatoes on a griddle?

I recommend cooking your potatoes at 400° F which will be medium-low to medium.

    Storage

Leftovers can be stored in an airtight container in the fridge for up to five days.

Sometimes I like to lift up leftovers by tossing them with parmesan cheese and reheating on a cookie sheet. This forms a delicious crust that makes them almost as crispy as they where when they were first cooked.

(A dollop of sour cream and sprinkle of kosher salt is a nice finish to these tender baby potatoes.)

But, if you are short on time, the microwave works just as well.

    How to Make Blackstone Potatoes

Potatoes on the Blackstone griddle are so easy to make!

Start by preheating your Blackstone to 400° F. This will be either low or medium-low, depending on the model and the conditions where you are.

Use an infrared thermometer to make sure you are at the right temperature.

Place the potatoes in a large bowl and toss with the avocado oil, garlic powder, rosemary, salt, and pepper.

Oil the griddle and add the potatoes.

Cook, until the potatoes are golden brown on the outside and tender on the inside. The total time will be about 20 minutes.

You can garnish with fresh herbs if you like.

Don’t Have a Blackstone and Want to Make Pan Fried Potatoes?

Follow these instructions, but heat a skillet on the stove to 400° F.

Depending on your stove, this will probably be either medium heat or medium-high heat. I recommend using an infrared thermometer to make sure this fried potatoes recipe comes out perfectly!

If the potatoes start to get too brown towards the end of the cooking time, just turn the temperature down and continue cooking until they are fork-tender.
