    Salads are a favorite of mine, and I love to mix up my salad game with something different from time to time. This Brussels Sprouts Salad is fabulous as a meal on its own, and it makes a great side. Shaved Brussels sprouts are marinated in a tangy dressing to create a delicious salad that you can make ahead of time. This is a dish that even non-salad lovers will adore.

    I am all for indulging a bit around the holidays, but the older I get, the more I realize how important it is that I eat ingredients that will leave me feeling great.

    So while I won't be saying no to pie this holiday season, I will be making sure that there are wholesome options on my table. I will also be planning a menu that is packed with nutritious options in the days following Thanksgiving and Christmas.

    I like to think of this as my recovery menu!

    Recipes like this Shaved Brussels Sprout Salad perform double duty during the season. It works fabulously as a holiday side dish and is also a nutrient-rich option that is perfect for post-holiday recovery

    If you have never tried a raw Brussels sprout salad, you are in for a treat! I love the texture, which is reminiscent of cole slaw. The zippy dressing and addition of pomegranate seeds keep the flavor perky and bright.

    I like to keep things light after the holidays, and so I've chosen to keep this salad dairy-free. But that doesn't mean we are going to skimp on flavor!

    Instead, I am using Daiya Cutting Board Collection Shreds, which are deliciously dairy-free and plant-based. The texture and flavors are so much like dairy that even the kids will eat them!

    How to Make Shaved Brussels Sprouts Salad

    1 First, make your dressing by combining the lemon juice, apple cider vinegar, Dijon mustard, red onion, erythritol, garlic, thyme, salt, and pepper in a blender. With the motor running, drizzle in the oil.

    2 Next, place the washed and shaved Brussels sprouts in a bowl. Toss with the dressing and let sit at room temperature for an hour. You can also refrigerate overnight.

    3 Finally, stir in the Daiya Cutting Board Collection Cheddar Shreds, pine nuts, and pomegranate.

    Frequently Asked Questions

    Do you have to cook Brussels sprouts?

    No! Brussels sprouts are very much like tiny cabbages in both taste and texture. When served raw, they are best shredded or shaved and marinated in a dressing that has a touch of acidity to it.

    Can this recipe be made ahead of time?

    Yes! Brussels sprouts are sturdy and, like cabbage and kale, lends itself to salads that can be made ahead of time. This dish will keep up to three days covered in the refrigerator.

    How do you trim Brussels sprouts?

    Trim a small amount from the stems and then remove any browned outer leaves.

    How do you shave Brussels sprouts?

    You have three options for shaving Brussels sprouts. The easiest way is to use a slicing disk of a food processor. If this isn't an option, you can also use a sharp knife tho slice them as thinly as possible. You can use a mandoline if you like, but I have found that this is the most challenging way to shave Brussels sprouts, and it also runs the highest risk of cutting yourself.

    Variations for this Recipe:

    • Substitute whole-grain mustard or brown mustard for the Dijon.
    • Use dried cherries in place of the pomegranate.
    • Almonds, walnuts, or pecans are all great in place of the pine nuts.

    Ingredients

    Dressing

    • 2 tablespoons fresh lemon juice
    • 2 tablespoons apple cider vinegar
    • 2 tablespoons Dijon mustard
    • 2 tablespoons minced red onion
    • 2 tablespoons erythritol confectioners-style sweeter or other sweetener
    • 1 teaspoon minced garlic
    • 1 teaspoon dried thyme or 1 tablespoon chopped fresh
    • ½ teaspoon sea salt
    • ½ teaspoon fresh ground black pepper
    • ½ cup olive oil (extra virgin)

    Salad

    • 2 pounds Brussels sprouts shaved
    • 1 cup Daiya Cutting Board Collection Cheddar Shreds
    • ½ cup pine nuts toasted
    • ⅓ cup pomegranate ariels

    Instructions

    • In a blender combine lemon juice, apple cider vinegar, dijon mustard, red onion, erythritol, minced garlic, thyme, salt, and pepper. Process to combine. With the motor running, add the oil in a steady stream.
    • Place the Brussels sprouts in a large bowl and toss with the dressing. Let sit at room temperature for an hour, or refrigerate overnight.
    • Stir in the Daiya shreds, pine nuts, and pomegranate and serve.

      Wow - this really does look so tasty in addition to being healthy. It also looks like a great way to get kids in particular that I know don't like brussel sprouts - to actually eat and enjoy them. Can't wait to see how this goes for us but I am feeling very confident.

      I'm a big fan of salads too! I like eating unique salads, and this falls into that category, as I've never had one with Brussels sprouts! This looks delicious!
