    Ingredients

    • Eggs: Six eggs provide a rich flavor and protein to this quinoa egg casserole. Make sure to whisk them together before adding them to the dish.
    • Milk: The milk adds to the creamy texture of the dish and helps keep it from drying out while baking. Feel free to use any type of milk you prefer, such as almond, coconut or oat. Just make sure you use unsweetened milk.

    Ingredients

    • 6 eggs
    • ½ cup milk
    • ½ cup cottage cheese
    • 1 teaspoon garlic powder
    • ¼ teaspoon crushed red pepper
    • ½ teaspoon sea salt
    • ½ teaspoon ground black pepper
    • 1 cup cooked quinoa
    • 1 cup cheddar cheese divided

    Instructions

    • Preheat oven to 350 degrees. Prepare an 8 x 8 baking dish with cooking spray. (You may also use individual ramekins.)
    • In a medium bowl, whisk together eggs and milk. Stir in cottage cheese, garlic powder, red pepper, sea salt, and black pepper.
    • Add quinoa and half of cheddar cheese. Pour into baking dish and top with remaining cheese.
    • Bake for 30 minutes. If desired, brown the top by placing under a broiler for 2 or 3 minutes.
