Roasted Sweet Potatoes with Honey have crisp edges and soft centers. White balsamic keeps them savory sweet instead of candy sweet. In my kitchen, this easy sheet pan side is a weeknight habit, a meal prep staple, and a holiday no-brainer.

At my house, oven roasted sweet potatoes are the side dish that saves dinner. My version leans on a quick honey butter sauce with a splash of white balsamic, and wow, it wakes everything up.
When I tested this recipe, the edges got browned, the centers stayed plush, and the glaze got glossy and sticky in the best way.
The whole family loved the natural sweetness that comes from roasting. Serve it with honey BBQ chicken breast or in a Buddha bowl next to your favorite grain. I’ve been known to enjoy leftovers for a snack.

Ingredient Notes & Substitutions
- Sweet potatoes: Any variety works - it isn't a fussy recipe. You could even use yams if you like.
- Honey: Maple syrup is a good swap if you don't have honey on hand or want to keep this vegan-friendly.
- White balsamic vinegar: Sub rice vinegar or apple cider vinegar plus a pinch of sugar.
- Butter: Swap ghee for nutty flavor. You could use olive oil, though I recommend skipping extra-virgin olive oil at high roasting temps.
- Seasonings: I just used salt and pepper, but feel free to add spices. Cumin, garlic powder, or cinnamon are great choices to take flavors in a different direction.
How to Roast Sweet Potatoes

Tips & Tricks
- Give them space: This recipe is one of the times I pull out my larger sheet pan. If you crowd them, they will steam and not brown.
- Flip once, not five times: Let the first side get deep color before turning. It's an uncommon choice, but I've been known to use a fish spatula to make flipping easy because it is thin and easily slides under the potatoes without breaking them apart. (Any spatuala works though!)
- Make it your own: Get creative! Add rosemary, thyme, or cayenne. Use taco seasoning and make these sweet potatoes the filling for a breakfast burrito.
