- Apples: Use firm baking apples like Honeycrisp, Pink Lady, or Granny Smith; You can peel if you want a softer texture, but for me it isn't worth the effort.
- Brown sugar: Swap coconut sugar, honey, or maple syrup.
- Butter: I prefer unsalted butter, but ghee, coconut oil, and vegan butter can also be used.
- Oats: Use old-fashioned oats. Quick oats will turn into a pile of mush. (Ask me how I know!) If you want to set this up at night for an easy morning, steel-cut oats are a great option because they require a longer cooking time.
- Walnuts or pecans: You can substitute almonds, hazelnuts, or pumpkin seeds.
- Cinnamon: You could also add apple pie spice, a pinch of nutmeg, or ginger.
- Vanilla: Use pure vanilla or vanilla bean paste.
- Cooking spray: I like cooking spray for ease, but butter or coconut oil will grease the slow cooker just fine.
- For Topping: Feel free to sprinkle with more brown sugar, drizzle with maple syrup, or add raisins, apricots, berries, or bananas.

Tips & Tricks
Avoid Watery Oats
Apples leak juice, so we don’t drown them from the start. Go lighter on water, because you can always add more at the end, but nothing gets eyerolls at breakfast like watery oats. Steel-cut oats will need a bit more than old-fashioned oats.
Add milk late (if you want to use it)
Cream works just fine for 6–8 hours, but regular milk, coconut, or almond? They can split or scorch. Add those in the last hour or so instead. The exception would be canned coconut milk, which in my experience does well for longer cooks.
Fight the scorched edges
Grease the crock. Stir once if you’re awake. When I cook overnight, I switch from Low to Warm for the last hour or two. Saves the edges.
Know your cooker
Every slow cooker has a personality. If the Low runs hot, shorten the cook. If the edges brown too fast, scrape them off and finish on Warm next time.
Wholesome boost
Collagen or chia stirred in at the end works wonders. No chalky texture, just thicker, heartier oats.
Store smart, reheat right
Cool leftovers quick. They’ll thicken in the fridge, so loosen with warm water or milk when you reheat. Perfect for make-ahead breakfasts.

Ingredients
- 3 apples cored and diced
- ⅓ cup firmly packed brown sugar
- 2 tablespoons unsalted butter
- 5 cups water
- 1 ½ cups old-fashioned oats or steel cut
- ½ cup chopped walnuts or pecans
- 2 teaspoons cinnamon
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
- Spray a slow cooker with cooking spray.
- Add the apples and then sprinkle with the brown sugar. Toss to coat
- Cube the butter and scatter it over the apples. Add the water, oats, walnuts, cinnamon, vanilla, and salt.
- Cover and cook on low for 6 to 8 hours.
