Ingredients
- Chickpeas: These are a great source of protein and have a satisfying crunch. If you're fresh out of canned chickpeas, no worries! You can also soak and cook dried chickpeas—just remember, it'll take a bit more time!
- Extra Virgin Olive Oil: Substitute with avocado oil or coconut oil if you prefer, but remember, each oil will add a slightly different taste.
- Sweet Curry Powder: If you don't have this on hand, you could also use hot curry powder. Just beware - some brands are really hot so you may wish to dial the amount back a bit.
- Ground Cumin: Our second spice superstar, ground cumin lends a warm, earthy flavor. If you’re in a pinch, ground coriander makes a decent stand-in.
- Dried Thyme: If thyme's not your thing, rosemary or oregano could add a lovely twist too.
- Sea Salt: Last but definitely not least, a good pinch of sea salt brings all our flavors together. Feel free to adjust the quantity to suit your taste buds.

Preheat your oven to 400 degrees and prepare your baking sheet with a layer of parchment paper.
Next, rinse and drain your chickpeas. Pat them dry with a clean kitchen towel and put them into a large bowl.
Add olive oil, curry powder, cumin, thyme, and sea salt and toss well.
Transfer your spiced chickpeas to the baking sheet in a single layer.
Cook in the oven for 40 to 45 minutes and stir halfway through.

Curried Roasted Chickpeas
Ingredients
- 1.5 cups chickpeas about 1 can
- 1 tablespoon olive oil
- 2 teaspoons sweet curry powder
- 2 teaspoons ground cumin
- ½ teaspoon dried thyme
- 1 teaspoon sea salt
Instructions
- Preheat oven to 400 degrees. Line a rimmed baking sheet with parchment paper.
- Rinse and drain chickpeas. Pat dry with a clean kitchen towel and place in a large bowl. Add olive oil, curry powder, cumin, thyme and sea salt. Toss to coat and then transfer in a single layer onto prepared baking sheet.
- Cook for 40 to 45 minutes, stirring half way through. Remove from oven and allow to cool.

How does roasting a chick pea change it?, Does it make it change the texture or flavor? I am a Southern girl, I love boiled peanuts, not everyone is a fan. There is a big difference between boiled and roasted peanuts. I have never been a fan of chick peas, canned, salad bar or in soup. Before I buy some chick peas and roast them, would this change my mind?

I think it is the kind of thing you have to try and see for yourself. I'm a Southern girl too and love boiled peanuts. i would say the texture change isn't quite as significant as with peanuts, but because you are seasoning them the taste change is huge.
