Late August is always when I think about getting our family back into a routine.

I wouldn't say that we are ones for extreme structure to start with and our family becomes even more lax in the summer. The boys bed times are really relaxed, and dinner may be way later than it should be because we've been outside playing.

As we get closer to September, I start thinking about getting the kids on a more structured schedule.

Part of this, is a family dinner.

I've talked before about what a challenge this can be, mostly because it is so hard to get the boys to agree on anything food. And now with a toddler in the mix, the idea of getting a meal on the table can be downright daunting.

One thing that never fails me is pizza.

Of course, being the kind of mom I am, I'm looking to pack their pizza with as much nutrients as I can.

So, we start with my gluten free quinoa pizza crust. Did you know that quinoa flour is just ground up quinoa with no additional processing? You can even make your own! Then I sneak as many veggies in as I can get away with.

Believe it or not, my boys actually like onions and garlic, but feel free to just put it on half if your kids don't approve.

Pizza night always reminds me that getting our family back to the dinner table means great conversations, lots of laughter and happy kids.

Tomato Feta Pizza

This Tomato Feta Pizza with Quinoa Crust is a delicious healthier pizza that the whole family will love. Gluten Free and Vegetarian.
My boys happen to love onion and garlic, but feel free to leave it off half if your kids don't!

Ingredients

  • 1 pound gluten free quinoa pizza dough
  • 1 tablespoon extra virgin olive oil
  • 2 medium tomatoes sliced
  • 1 red onion sliced thin
  • 6 cloves garlic sliced thin
  • ½ cup crumbled feta cheese or vegan feta
  • ¼ cup kalamata olive pitted and sliced
  • ¼ teaspoon crushed red pepper
  • ⅓ cup fresh basil

Instructions

  • Place a pizza stone on the bottom rack of your oven. Preheat to 420 degrees.
  • Roll out pizza dough on parchment paper. Brush with olive oil and top with tomatoes, onion, garlic, feta, olives and crushed red pepper.
  • Using a pizza peel or the back of a sheet pan, carefully transfer crust to pizza stone. Cook for 20 to 25 minutes.
  • Top with fresh basil and serve warm.
