For years I have heard people make jokes about how much food boys could eat.
I never really paid much attention the validity of this until the last year.
You know I complain – a lot – about how picky my boys are.
Well, they may be picky, but these boys can eat!!! Get a couple of their friends over and look out.
I frequently feel like the house is stocked only to find myself with an empty pantry and fridge just days later.
I used to be able to hide things I needed for recipes in the produce drawer, and then one of them discovered my trick, so that doesn’t work anymore. (Recently, I even found Christian using my method. He had hidden a bag of string cheese underneath the kale.)
While the boys certainly keep me on my toes, there are a few tricks I have up my sleeves.
One thing I’ve been trying to keep on hand is José Olé Mexican snacks. The boys both love these Quick & Easy Chicken and Cheese Taquitos. I top them with a little cilantro and tomato and serve them with a little sour cream, and they are always happy. It is an excellent way to feed a hungry group of boys.
The José Olé Chimichangas are also a big hit at our house. They are great as-is but also fabulous topped with a little salsa.
- 1 box José Olé Chicken & Cheese Taquitos
- ¼ cup sour cream
- 1 small tomato, diced
- ¼ cup cilantro, chopped
- Cook José Olé Chicken & Cheese Taquitos according to package directions.
- Arrange on a platter. Place sour cream in a small baggie and cut the corner. Drizzle sour cream over taquitos. Top with tomato and cilantro and serve.
