Some days just need to start with chocolate, but that doesn't mean giving up nutrition! They Healthy Chocolate Pancakes are rich and delicious, with the added benefit of being packed with nutrition.

How many Mom's out there struggle to get your kiddos to eat their greens? We are doing a little better with that, but we still have a long way to go before we are anywhere near where we need to be.
As someone who will happily eat salad for breakfast, I struggle with the boys resistance to all things green. (Skye's still a picky toddler - I figure there is still hope that she might grow out of it.)
When I was lucky enough to receive Barlean's Silk Chocolate Greens as part of #Choctoberfest, the first thing I did was mix it up with milk in the blender. My oldest LOVES chocolate milk. While I was sure that I was going to love it, I was skeptical that he would even try it. This is the kid who differentiates between different brands of mustard and swears that certain foods taste differently depending on where we are in the country. I try to convince him that there is no way Amy's Macaroni and cheese is different in Arizona than Florida, but he isn't buying it. Without a doubt, he is the most critical of my little food critics.
He sniffed it, and I cringed. Then he tried it and miraculously declared that it tasted just like chocolate milk. The next day, he asked if he could have it again. I taught him how to make it and he's been whipping up a green drink daily since. SCORE.
Now I needed to figure out something for my other two, neither of which would even try it. (This wasn't surprising - they won't try chocolate milk either.) Both of them love chocolate and pancakes....so I immediately thought chocolate pancakes.
Another score! Light and fluffy, the taste reminds me a bit of brownies.

Healthy Chocolate Pancakes
Chocolate Quinoa Pancakes
Ingredients
- 1/2 cup Greens powder
- 1/2 cup almond meal
- 1 1/2 cups quinoa flour
- 1 tablespoon honey
- 1 teaspoon gluten free baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs beaten
- 3/4 cup buttermilk
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
Instructions
- Combine all ingredients in a blender and process until smooth. (You may also beat well by hand.) Allow to sit for 30 minutes to thicken.
- Heat a griddle or pan to medium heat. Spray well with oil. Using a 1/4 cup measure, drop batter until pan. When bubbles start to form flip. Cook for another 5 minutes, or until cooked through.

You could try a chocolate protein powder. Just pay attention to your moisture levels as protein absorbs liquid so you might need to make an adjustment.
