This BBQ Ranch Chicken Casserole is a great easy weeknight casserole that comes together so quick! Gluten Free and Kid-Friendly, this is one you will make again and again.

Today I’ve got a quick and easy dinner for you: BBQ Ranch Chicken Broccoli Casserole.
I know you like easy, right? Let's get started!
Ingredients
- Broccoli: I used frozen broccoli for ease, but you could blanch fresh broccoli florets if you prefer.
- Cooked Shredded Chicken: Any leftover chicken will do. You can cook your chicken - either chicken breasts or thighs - in the Instant Pot, Crockpot, or even buy a rotisserie chicken.
- Cooked rice or quinoa: Either work just fine!
- Cheese: I used shredded cheddar, but feel free to use what you have on hand.
- Onion: Red onion is what I used, but any onion works just fine.
- Tomato: Use either diced tomatoes, or halved cherry or grape tomatoes.
- Barbecue sauce: Make sure to choose your favorite brand, since it impacts the flavor quite a bit.
- Sour cream: Full-fat sour cream will yield the best flavor.
- Ranch seasoning: Buy a packet, or use my homemade ranch seasoning.
- Chili powder: If you like you can use ancho chili powder for a milder flavor.
- Onion powder: Garlic powder could be subsituted.
- Sea salt: Kosher salt also works.
Tips & Tricks
- For extra crispy broccoli, try roasting it in the oven before adding it to the casserole. It adds a delightful crunch and deeper flavor.
- Know you have a busy night? Cook the rice or quinoa earlier in the week so it is ready when you are.
- Mixing half of the cheddar cheese into the casserole and sprinkling the rest on top creates a deliciously melty layer that's hard to resist.
- Want a little heat? Add a touch of cayenne pepper or chopped jalapeños to the mix.
- Consider serving with a side of tortilla chips for some added crunch and a fun twist on traditional casseroles.
- If you’re short on barbecue sauce, try a combination of ketchup and a splash of vinegar for a quick substitute.

- 16 ounces frozen broccoli
- 16 ounces cooked chicken shredded
- 4 cups cooked rice or quinoa
- 8 ounces shredded cheddar cheese divided
- 1 red onion chopped
- 1 tomato chopped
- 1 cup barbecue sauce
- ½ cup sour cream or Greek yogurt
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon sea salt
Instructions
- Preheat oven to 350 degrees. Spray a casserole dish with cooking spray.
- In a large bowl combine broccoli, chicken, quinoa or rice, half of cheese, red onion, and tomato.
- In a separate bowl whisk together barbecue sauce, Greek yogurt or sour cream, chili powder, onion powder and salt. Toss with chicken and broccoli mixture.
- Transfer mixture to prepared casserole dish. Top with remaining cheese. Bake for 30 minutes. Serve warm.
