Raise your hand if you’ve ever struggled to come up with a weeknight dinner that feels satisfying, doesn’t blow the budget, and still gets cheers from the whole family. With three picky kids, I have been there many times.
That’s why I’m hooked on my version of sheet pan meatloaf. It’s quick to pull together, uses everyday ingredients, and turns into a meal that feels way more special than the effort it takes.
It has become the kind of recipe I fall back on when I don’t want to stress about dinner because it is a meatloaf dinner that the family will look forward to.
For Serving
Mashed Potatoes are a classic side to serve with meatloaf, and both my Yukon Gold Mashed Potatoes and Loaded Mashed Potato Casserole are great options. Green veggies are the perfect way to round out the plate.
We love Oven Roasted Green Beans, Marinated Broccoli, and Honey Sriracha Brussels Sprouts. Serve this with Sauteed Carrots, Blackstone Sweet Potatoes, or Roasted Grape Tomatoes for even more color on the plate.

Ingredients and Substitutions
- Breadcrumbs –I've made this with both plain and panko breadcrumbs, and both are good. Gluten-free breadcrumbs will work just fine!
- Parmesan cheese – Pecorino Romano or Asiago are good alternatives. Fresh is always best - I personally do not use or recommend canned parmesan.
- Cayenne pepper – Optional for a touch of heat. Smoked paprika or chili flakes can be used instead.
- Eggs – I used large eggs, but any size will do.
- Milk – Any dairy or unsweetened non-dairy milk works.
- Soy sauce – Tamari or coconut aminos are good swaps.
- Garlic – Fresh minced gives the strongest flavor, but garlic powder can be used in a pinch. If you don’t like garlic, onion powder is a good substitute.
- Ground beef – Use 80/20 for juicy meatloaf. Can be substituted with part pork or ground turkey.
- Ketchup – BBQ sauce or chili sauce change the flavor profile, but can be used.
- Brown sugar-Honey or maple syrup can be used instead.
- Apple cider vinegar – Red wine vinegar or balsamic can work if that’s what you have.
Troubleshooting
- Dry meatloaf: Choose 80/20 ground beef or mix beef with ground pork for moisture.
- Dense texture: Overmixing makes meatloaf tough. Gently fold the ingredients together until just combined.
- Undercooked center: Since meatloaf on a sheet pan is shaped thinner, it usually cooks evenly, but still check with a digital thermometer. Bake until the internal temperature reaches 160°F, adjusting the cooking time as needed.
- Messy Clean-up: Lining the sheet pan with foil or parchment will make clean-up much more manageable.

Bake for 35 minutes.

Return to the oven and bake 5–10 minutes more, until internal temperature reaches 160°F. Tent with aluminum foil and let rest 5 minutes before slicing and serving. Sprinkle with fresh parsley if desired.

Sheet Pan Meatloaf with Brown Sugar Glaze
Ingredients
Meatloaf
- ⅔ cup breadcrumbs
- 1 cup grated parmesan cheese
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- ¼ teaspoons cayenne pepper optional
- 2 eggs beaten
- ⅓ cup milk
- 1 tablespoon soy sauce
- 1 tablespoon minced garlic
- 2 pounds ground beef
Glaze
- ½ cup ketchup
- 3 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 tablespoon soy sauce
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper or foil, and spray with cooking spray.
- In a large bowl, combine the breadcrumbs, cheese, salt, pepper, and cayenne pepper. Stir to combine.
- Add the eggs, milk, soy sauce and garlic, and combine.
- With clean hands, fold in the meat and incorporated the breadcrumb mixture into it. (I like gloves for this.)
- Transfer the meat mixture to the prepared baking sheet, and form the meatloaf mixture into a rectangle, about 9” x 5”.
- Combine the ketchup, brown sugar, apple cider vinegar, and soy sauce in a bowl. Divide the mixture into 2. Brush ½ of the mixture on top of the meatloaf.
- Bake for 35 minutes. Brush with the remaining glaze, and bake for another 5 to 10 minutes, until the internal temperature is 160°F.
