Ingredient Notes
I like using buttermilk for extra flavor, but whole milk works well too. Honey adds a nice touch of sweetness, but I’ve tested this with white sugar, and that works as well.
I used King Arthur Flour in testing, which has higher protein than some (especially Southern) all-purpose flours. If you use a different brand, you may need to add a bit more flour. I believe that a gluten-free blend could be substituted in this recipe, but I haven’t tested it.
For cinnamon, I highly recommend this one. It is so full of flavor that it is the only cinnamon you’ll find in my kitchen.

Tips and Tricks
- Watch the Proof Time: Watch the time on your dough as it rises, and don’t let it stay in the bread machine past the recommended time. Over-proofing (letting it rise too long) results in a sticky dough that will overfill with air and eventually can pop completely. You also don’t want to underproof your dough, as this will result in a dough that has a tight crumb and is dense.
- Cool Before Slicing: Let your bread cool for at least 30 minutes before slicing. This essential step ensures your bread sets properly, making it easier to slice and enjoy those perfect cinnamon swirls. Bonus points if you can let it cool completely.
- Add Mix-Ins Carefully: If you’re adding raisins, walnuts, or pecans, make sure to add them at the right time—usually after the initial mixing phase. This prevents them from sinking to the bottom or getting crushed.
- Store Properly: Once cooled, store your cinnamon bread in an airtight container, plastic wrap or foil at room temperature. The refrigerator dries out bread, so for longer storage, I recommend storing it in the freezer.

Soft & Fluffy Bread Machine Cinnamon Bread (Loaf)

Ingredients
Dough
- 1 cup water
- ½ cup milk or buttermilk
- 2 tablespoons honey
- 3 ¼ cups all-purpose flour
- 2 ¼ teaspoons instant yeast or bread machine yeast
- 2 ¼ teaspoons fine salt sea salt or kosher salt
- 1 teaspoon ground cinnamon
For Filling
- 1 large egg
- ½ cup brown sugar
- 2 teaspoons ground cinnamon
Instructions
- Place the water, milk, honey, flour, yeast, and salt in your bread machine. Select the dough function, and process according to the manufacturer’s directions.
- Grease a 9 x 5 x 3 bread loaf pan.
- Dust a pastry mat with flour, and add the dough. Dust with more flour.
- Shape the dough into a ball, stretching the dough around the bottom of all four sides.
- Roll the bread dough into an 8 x 16 inch rectangle.
- Beat the egg and water in a small dish and brush the dough with the egg wash using a pastry brush.
- Mix together the sugar and cinnamon. Sprinkle over the dough.
- Start from the short side and roll the dough up. Pinch the ends together and then tuck the ends under.
- Transfer the loaf to the prepared pan.
- Allow to rise for 45 minutes.
- Preheat your oven to 375°F. Brush the top of the dough with the remaining egg wash.
- Bake for 35 to 40 minutes.
- Cool in the pan for about 5 minutes, and then transfer to a wire rack. Allow to cool before slicing.

Yes! Most bread machines beep when it is time to add your add-ins. (After the dough has come together, but before it has risen.) You will want to add them then.
