Ingredients and Substitutions
- Eggs provide a richness and fluffy texture that really elevates the fried rice. I like to cook mine and then chop them, but feel free to scramble them if you prefer.
- Toasted Sesame Oil is your secret weapon for that authentic, nutty depth. If you're missing this, peanut oil can step in, offering a slightly different but equally yummy flavor.
- Salt and Pepper are your go-to seasonings here. Trust your taste buds and adjust as you see fit.
- Butter takes flavors to the next level. If you're ditching dairy, coconut oil is a fantastic alternative for a hint of sweetness.
- Minced Garlic is something you won't want to skip. In a bind, garlic powder can fill its shoes.

How to Make Hibachi Fried Rice

Whisk together eggs, sesame oil, salt, and pepper in a bowl.
Combine butter, garlic, and ginger in a separate bowl.
Heat avocado oil in a large cast iron skillet, wok, or on a Blackstone griddle over medium heat.
(Some electric stoves may need to be closer to medium high heat for fried rice. Blackstone hibachi fried rice should be cooked over medium heat, in my experience.)
Add the egg mixture to the skillet and cook for 1 minute, or until set.
Remove eggs from the skillet to a plate and chop them.
Add the rice and scallions to the skillet. Stir fry for 3 minutes.
Stir in soy sauce and mirin.
Mix the chopped egg back into the skillet.
Cook for an additional 2 minutes, then add the ginger garlic butter.
Stir until the butter is completely melted.
Remove from heat and serve warm.
Tips and Tricks
- Use Leftover Rice: Using freshly cooked rice is a fast track to mushy hibachi style fried rice. Opt for leftover rice that's had the chance to cool down and dry out. A night in an airtight container in the fridge works wonders, giving you that perfect, non-sticky texture. If overnight is too long a wait for your Japanese fried rice cravings, at least give your rice several hours to cool and dry out. This step is the secret behind that signature fried rice texture we all know and love.

Hibachi Fried Rice
Ingredients
- 3 large eggs
- ½ tablespoon toasted sesame oil
- Salt and pepper
- 2 tablespoons butter softened
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 2 tablespoons avocado oil
- 4 cups cooked white rice
- 4 scallions sliced
- 2 tablespoons soy sauce
- 2 tablespoons mirin
Instructions
- In a bowl, wish together the eggs, sesame oil, salt, and pepper.
- In a separate bowl, combine the butter, garlic, and ginger.
- Heat the avocado oil in a large cast iron skillet, wok, or on a Blackstone griddle over medium heat.
