Ingredients
- Italian Breadcrumbs: You could use plain breadcrumbs if you don't have Italian.
- Salt: Kosher or sea salt are my go-to.
- Garlic Powder: A tablespoon of freshly minced garlic is also a good option.
- Black Pepper: Fresh ground is best.
- Eggs: I used large eggs.
- Milk: I like whole milk here, but whatever you have, work.
- Worcestershire Sauce: Soy sauce could be used for a slightly different flavor profile.
- Ground Beef: Feel free to substitute with ground pork or ground turkey.
- Grated Parmesan: Freshly grated cheese will have the most flavor.
- Ketchup: You could use chili sauce for a different twist.
- Brown Sugar: Feel free to adjust the amount according to your preference.
- Balsamic Vinegar: Balances the sweetness of the glaze; if you don't enjoy balsamic, you could use apple cider vinegar instead.
Tips and Tricks
- Avoid overmixing the meatloaf mixture to keep the texture tender and juicy.
- Rest the meatloaf before slicing; this helps retain juices.
- You can add additional seasonings, like thyme or smoked paprika; you could also add a tablespoon of Dijon mustard or onion.
- Add hot sauce or cayenne pepper to the ketchup mixture if you prefer a spicier glaze.
- For a gluten-free option, use gluten-free breadcrumbs or crushed gluten-free crackers.
Step By Step

Storage
Store leftovers in an airtight container for up to three days. I don’t know about you, but I enjoy leftover meatloaf sandwiches as much as I enjoy meatloaf the first time!
