This Butternut Squash Quinoa Breakfast Bowl is the perfect way to energize your day. With quinoa, egg, and black beans this savory breakfast bowl is packed with all the protein you need to power through busy mornings. Add to that butternut squash, avocado, cheese and fresh salsa, and you've got a dish that is as delicious as it is nutritious. You will feel great starting your day with this warm breakfast quinoa bowl. Gluten Free and Vegetarian.

The last few weeks have been such a whirlwind.

My youngest son turned twelve, and wow, did we make a celebration of it.

We spent three days at Universal Studios Florida and Islands of Adventure. There were roller coasters involved.

On the actual day we had a great family lunch out, and of course a birthday party. Hubby even surprised him (and me!) by flying my parents out, which he declared the best present of all.

We did a similar week at Disney for my oldest sons birthday in December, and the whole family ended up getting sick.

I took extra precautions this time to try to keep everyone healthy, and the first place I started is with our diets.

Overhead It is so easy to forget about nutrition during special times.

I am all about indulgence, but I also know that I need to get an abundance of vegetables in my diet to stay healthy. This is especially true when I am in crowds with people hacking all around me, and I'm pushing my body to the limit with extra activity.

One way to fix vegetables than has never failed to please the kids is to spiralize them.

There is something fun about spiralized vegetables, isn't there?

I've been making zoodles for a couple of years now, and am always happy when I take the time to do it. It is a great way to keep the peace with the kids at meal time.

As much as I love pasta, I love how I feel when I eat spiralized vegetables in place of it.

Up until now, the biggest challenge has been finding the time to make veggie noodles. (Not to mention I hate cleaning off the blade to my spiralizer.)

When I am stepping up my nutrition game, I love to serve vegetables at breakfast.

I know it may sound odd for some of you, but stick with me on this one.

This Butternut Squash Quinoa Breakfast Bowl is a delicious way to fuel your busy day. I always feel great when I eat quinoa for breakfast, and even better when I get a healthy serving of vegetables.

I like to use fresh salsa - the kind you get from the produce section - when making this Quinoa Breakfast Bowl, but feel free to substitute whatever type of salsa you have on hand. Another option is to toss a little diced red onion with a fresh topped tomato!  I've also made this breakfast quinoa bowl with just diced tomatoes and it was still great.

Variations On This Quinoa Breakfast Bowl:

  • Used zucchini in place of butternut squash, chickpeas instead of black beans and Tzatziki Sauce in place of salsa.
  • Instead of avocado, try this Avocado Cream
  • Start your day with some green!  Serve this over massaged kale.

Quinoa Breakfast Bowl with Butternut Squash

Ingredients

  • 1 package Butternut Squash Green Giant Veggie Spirals
  • 2 cups cooked quinoa
  • 1 cup cooked black beans
  • 2 ounces cheddar cheese shredded
  • ¼ cup fresh salsa
  • 4 large eggs
  • 1 avocado sliced
  • For serving: lime juice flakey salt, crushed red pepper, cilantro
US Customary - Metric

Instructions

  • Cook butternut squash according to package directions. Drain.
  • Divide quinoa, black beans, butternut squash, cheese and salsa among serving bowls.
  • Spray a skillet with avocado oil and fry eggs to desired doneness. Place on the top of the bowls.
  • Top with avocado and garnish as desired.

    This is such a pretty and delicious plate of food! I am always attracted to making clean plates like this with great ingredients, and without all of the sauce. I actually have quinoa on hand, and was wondering what to do with it - what a great application!
