The last few weeks have been such a whirlwind.

My youngest son turned twelve, and wow, did we make a celebration of it.

We spent three days at Universal Studios Florida and Islands of Adventure. There were roller coasters involved.

On the actual day we had a great family lunch out, and of course a birthday party. Hubby even surprised him (and me!) by flying my parents out, which he declared the best present of all.

It has been such a happy time, but also exhausting. Let me tell you, three days of more than 20,000 steps on concrete isn't the easiest thing on the body.Black beans and quinoa in a bowl showing the process of making a quinoa breakfast bowl

We did a similar week at Disney for my oldest sons birthday in December, and the whole family ended up getting sick.

I took extra precautions this time to try to keep everyone healthy, and the first place I started is with our diets.

Overhead It is so easy to forget about nutrition during special times.

I am all about indulgence, but I also know that I need to get an abundance of vegetables in my diet to stay healthy. This is especially true when I am in crowds with people hacking all around me, and I'm pushing my body to the limit with extra activity.

Getting the kids to eat vegetables is always a challenge.Photo of quinoa breakfast bowl in the process of being made.

One way to fix vegetables than has never failed to please the kids is to spiralize them.

There is something fun about spiralized vegetables, isn't there?

I've been making zoodles for a couple of years now, and am always happy when I take the time to do it. It is a great way to keep the peace with the kids at meal time.

And great for me too!Photo of quinoa breakfast bowl with quinoa, butternut squash, black beans, salsa and cheese

As much as I love pasta, I love how I feel when I eat spiralized vegetables in place of it.

Up until now, the biggest challenge has been finding the time to make veggie noodles. (Not to mention I hate cleaning off the blade to my spiralizer.)

It has just gotten easier to substitute vegetables for noodles thanks to Green Giant® Veggie Spirals. They are the perfect swap-in for pasta and have up to 90% fewer calories per serving than the leading brand of spaghetti. I love that they come without any sauce or seasoning, so I can prepare them just how I like. And of course, since they are made with 100% vegetables, they are naturally gluten-free.Photo of Green Giant veggie spirals

You can get Butternut Squash, Zucchini, Beets and Carrot Veggie Spirals.  All of them are so easy to make.  You just cook and drain!

They are perfect as an entrée, a side dish, or soup.  You can learn more about Green Giant Veggie Spirals and find recipes  here.

When I am stepping up my nutrition game, I love to serve vegetables at breakfast.

I know it may sound odd for some of you, but stick with me on this one.

This Butternut Squash Quinoa Breakfast Bowl is a delicious way to fuel your busy day. I always feel great when I eat quinoa for breakfast, and even better when I get a healthy serving of vegetables.

I like to use fresh salsa - the kind you get from the produce section - when making this Quinoa Breakfast Bowl, but feel free to substitute whatever type of salsa you have on hand. Another option is to toss a little diced red onion with a fresh topped tomato!  I've also made this breakfast quinoa bowl with just diced tomatoes and it was still great.

Variations On This Quinoa Breakfast Bowl:

    • Used zucchini in place of butternut squash, chickpeas instead of black beans and Tzatziki Sauce in place of salsa.
    • Instead of avocado, try this Avocado Cream
    • Start your day with some green!  Serve this over massaged kale.

This is such a pretty and delicious plate of food! I am always attracted to making clean plates like this with great ingredients, and without all of the sauce. I actually have quinoa on hand, and was wondering what to do with it - what a great application!
